6 Campfire Skewers Recipes


No other meal screams “camping!” than campfire skewers. These meals-on-a-stick with their smoky and charred flavors are a staple in many camping meal plan. Eat them on their own, serve them with your favorite camping dishes, or enjoy them with a beer or some camping cocktails, either way, they are sure to please everyone at the campsite. 1. Beer and Honey Chicken Skewers

Marinating meat in beer has long been a practice of many barbeque specialists. Not only does it help to tenderize the meat, but beer also adds a distinct flavor to the whole dish. The following recipe works well with any type of beer so feel free to use your favorite brew. And don’t worry about the kids because the alcohol will simply evaporate while the skewers are on the grill (the meat still retains a little of the beer’s flavor though but the kids won’t even notice it).


  • 1 1/2 lbs. chicken breasts (deboned)
  • 3 cloves garlic minced
  • 3/4 cup beer
  • 1/3 cup honey
  • 1 tsp red pepper flakes
  • 1 tsp Dijon mustard
  • 1/4 cup soy sauce
  • 1 tbsp. olive oil
  • 2 tbsp. cilantro (chopped)

Cooking Instructions:

  1. Cut the chicken into small cubes, about 1 1/2 inches.
  2. In a bowl whisk all the marinade ingredients together.
  3. Add chicken and make sure that every piece is covered with the marinade. Let it sit for about 2 hours if you’re preparing it at camp. You can also make it at home and let it marinate for 24 hours in the fridge and just pack it a wheeled cooler (or whatever type of cooler you have) on the way to camp.
  4. Thread the chicken on skewers, about 5 pieces per skewer. Do not throw away the leftover marinade.
  5. Place chicken skewers on grill and turn every couple minutes or so, at the same time brushing some of the leftover marinades over the chicken, if preferred.
  6. Grill until chicken is cooked through.
  7. Garnish with chopped cilantro and serve.

2. Rosemary Lamb Skewers

Looking for something else aside from pork, chicken, or beef barbeque? Why not try some lamb meat for a change? This lamb skewer recipe is just bursting with flavor and will definitely up your barbeque game.


  • 8 (approximately 6-inch long) thick rosemary sprigs
  • 1 tablespoon olive oil (plus a bit more for the grill if necessary)
  • 1 pound boneless leg of lamb, cut into approximately 32 bite-sized pieces
  • 1 tablespoon garlic, minced
  • approximately 32 Kalamata olives, pitted
  • sea salt and freshly ground black pepper
  • 1 tablespoon feta cheese, crumbled

Cooking Instructions:

  1. Mix olive oil, garlic, and chopped rosemary in a bowl.
  2. Add lamb into the bowl and mix until the lamb is coated thoroughly.
  3. Remove lamb from marinade and skewer them alternating with the olives.
  4. Put the kebabs on your camping grill and cook each side for at least three minutes.
  5. Serve and enjoy.

3. Sweet and Sour Meatball Skewers


Kids will surely love these sweet and sour meatball skewers. They’re also pretty easy to make since you’ll be using frozen meatballs and pre-packaged sweet and sour sauce which you can get from your local grocery store.


  • 1 lb. meatballs
  • Red and green bell peppers cut into one-inch squares
  • 1 pack sweet and sour sauce

Cooking Instructions:

  1. Thread meatballs and bell peppers alternately onto skewers.
  2. Place the meatball skewers on the grill and brush with sweet and sour sauce.
  3. Grill for at least ten minutes, turning and basting occasionally.

4. Grilled Scallops and Orange Kebabs

Easy to prepare and quick to cook, this grilled scallops recipe is sure to be hit around the campsite. A quick note about grilling scallops, though. Make sure that your grill is clean and well-oiled, otherwise, the scallops will stick to the grill and will break if you forcefully pull them off.   • 1 tbsp. honey
  • 2 large oranges
  • 1 tbsp. freshly grated ginger
  • 1 lb. jumbo sea scallops
  • salt and black pepper

Cooking Instructions:

  1. Cut and squeeze one orange into a bowl to get the juice and then add the honey and ginger.
  2. Marinate the scallops in the mixture.
  3. Alternately thread the scallops and the remaining orange slices into the skewer and season with salt and pepper.

5. Meat Lover’s Kebabs

Meat lovers rejoice! This kebab combines chicken, pork, and beef in one tasty and flavorful dish. Because you’re going to be using three types of meat, you’ll also need three different marinades. Sure, it may sound like a lot of work but guaranteed it will be well worth it.

Main Ingredients:

  • ½ lb. Beef fillet
  • ½ lb. Chicken breast
  • ½ lb. Pork tenderloin

Beef Marinade Ingredients:

  • 1 tbsp. balsamic vinegar
  • 1/2 tbsp. olive oil
  • Salt and pepper

Chicken Marinade Ingredients:

  • 1/2 tbsp. tarragon
  • 2 cloves garlic, crushed
  • A squeeze of lemon juice
  • 1/2 tbsp. olive oil
  • Salt and pepper

Pork Marinade Ingredients:

  • 2 tbsp. soy sauce
  • 1 tsp. sesame oil
  • 1/2 tsp. finely chopped fresh ginger

Cooking Instructions:

  1. Cut all meat into cubes of the same size.
  2. Prepare the marinades in different bowls and add the meat.
  3. Skewer the meat alternating between beef, chicken, and pork until the skewers are full.
  4. Throw them in your portable grill and serve when cooked.

6. Cilantro Lime Shrimp Skewers

This flavorful grilled shrimp recipe is perfect for any camping adventure. Not only are they easy to make, but they also go well with other camping meals and cocktails. Note that this recipe calls for cilantro, but if you’re not a big fan of this herb you can replace it with chopped parsley. If you decide to go that route, you’ll also want to swap the lime juice with lemon juice since lemon pairs better with parsley.


  • 1 1/2 – 2 lbs. shrimp
  • 2 tbsp. lime juice
  • 2 tbsp. cilantro, chopped
  • 1/2 tsp. salt
  • 2 cloves garlic, grated
  • 1 tbsp. sugar (or honey)
  • 1/4 – 1/2 tsp. red pepper flakes
  • 1 tbsp. oil

Cooking Instructions:

  1. Combine all the marinating ingredients in a bowl and mix them up until the sugar dissolves.
  2. Throw in the shrimp and let it marinate for at least 3 hours.
  3. Place the shrimp on the skewers and grill them until cooked.
